Treat Tuesday: Thin Mint Mug Cake

When it’s cold outside, I like my breakfast warm. Enter Thin Mint Mug Cake!

I don’t enjoy drinking iced smoothies in the morning. However, I DO want Shakeology every day. It’s my Superfood bullet, it gives me my daily vitamins faster than a speeding train. Most importantly, it keeps my cravings for sweets at bay. So I’m playing around with creative alternate ways to prepare my Shakeology. This morning I made Think Mint Mug Cake. And it was so very delicious!


  • DRY:
    4 Tbsp almond flour
    2 tsp baking powder
    dash of Himalayan salt

    1 scoop Chocolate Shakeology
    optional: stevia or Splenda to sprinkle on top (if you like it sweet)
  • WET:
    1/4 tsp peppermint extract
    1 egg
    1/2 cup unsweetened almond milk


  1. Mix all DRY ingredients in a large mug
  2. Next, mix in WET ingredients
  3. Stir until combined
  4. Microwave for 2:30. Edges will pull from sides when ready.
  5. Enjoy your cake!
