Butternut Squash Latkes

When my family gets together for Hanukkah festivities, it’s all about the latkes.

Latkes are shredded potatoes and grated onions mixed with flour, salt and eggs, then fried in oil to make delicious potato pancakes that are crispy on the outside and moist on the inside. They are yummy. But this year I’m right in the middle of my Happy + Healthy Holiday group, where we practice 10 daily habits from Thanksgiving to the New Year. Traditional fried latkes are not in the cards for me. So I’m making 21 Day Fix Butternut Squash Latkes instead.

1 c shredded butternut squash
1/4 c diced onion
1 clove garlic, minced
1 egg
himalayan salt
black pepper
coconut oil cooking spray
plain greek yogurt (optional)

Blend first six ingredients together, then use coconut oil cooking spray to fry them in a skillet. Top with a little greek yogurt, if that sounds good to you!

(If you’re doing 21 Day Fix, 3 large latkes = 1 GREEN, 1/2 RED, 1/2 tsp)
